When you buy a whisky cask, you automatically become part of a small exclusive group with special access to both our cask stock and our history. We fill the cask with our award-winning New Spirit, and from the moment the bun is placed in the cask, the transformation from clear spirit to golden, matured whisky begins.
The maturation time depends on a large number of factors, which can be difficult to separate. The size of the cask, its previous use, the origin and properties of the wood, variations in temperature and humidity – all this helps to influence the maturation over the years. You cannot put a date in the calendar. Whisky decides for itself when it is ready to be bottled.
From clear spirits to finished whisky


From grain to malt

When the grain is ripe, it is harvested and malted. Malting makes it possible to convert the starch in the grain into sugars during mashing.

The beer is brewed and distilled

When the malt is mashed, we brew a top-fermented beer. To bring out the most fruit and complexity, we ferment for up to 140 hours. Subsequently, we double-distill the beer in traditional pot stills and thereby achieve our clear, award-winning New Spirit.

The maturation begins

The final stage is the maturation process, where the clear spirit is poured into wooden casks. As soon as the spirit meets the wood, the extraction of flavour and aroma substances begins, primarily sugars and the well-known notes of vanilla and caramel. If the cask is charred it will filter the whisky over time and help to create a more rounded character.

Angel's share

During maturation, the spirit is oxidized. The porosity of the wood allows air to enter the cask and develop the whisky in a positive direction. Unfortunately, something also disappears the other way. The evaporation is called the 'Angel's Share' and means that 2 - 3% disappears from the cask per year - and sometimes even more.
This is how you become the owner of a Thornæs whisky cask
Thornæs Danish Whisky is based on Danish organic barley and rye malt, and is brewed, double distilled and matured at the distillery in Kagerup, North Sealand - Denmark.

Bourbon barrel
The classic
Maturation in 200 liter (53 gal.) Bourbon barrels is for anyone who is seeking the classic taste of single malt whisky with distinct notes of vanilla, caramel and mocha.
Cask type: 1st or 2nd fill Bourbon - 200 litres
Wood species: White American oak
Maturation: Approx. 6-8 years
Finished volume: Approx. 160-180 liters at cask strength.

STR cask
The complex
STR casks are wine barrels that have been refurbished and prepared for the maturation of spirits. STR stands for 'Shaved, Toasted and Recharred' - a treatment that exposes fresh wood and restores the filtering properties of the cask, resulting in a more intense extraction of flavours and aromas and often a more complex end product.
Cask type: STR - 225-230 liters
Wood type: White American or European oak
Maturation: Approximately 4-6 years
Finished volume: Approx. 180-200 liters depending on cask strength

Sherry cask
The sweet
The sherry cask gives the whisky a darker and sweeter expression. The cask has typically contained sherry for 2-3 years before being filled by us. The result after maturation is a more vinous whisky with hints of prunes, raisins, nuts and dark spices.
Cask type: Sherry - 200-230 litres
Wood type: White American or European oak
Maturation 6-8 years
Finished volume: Approx. 160-200 liters depending on cask strength

Small and medium-sized casks
The intense
Smaller and medium-sized casks cover cask types from 30 to 130 litres. The casks can be used for full maturation, but are also suitable for finishing or pre-maturing whisky.
More surface contact means that the wood's effect on the spirit increases during storage, and therefore a more intense maturation occurs. The result is often whiskys with a strong flavor and more distinct character.

How to settle your whisky cask

Example: 200 l Bourbon cask
New spirit matured into whisky in 200 l. Bourbon: DKK 81,250.
Bottling of 70 cl. bottles: DKK 50 paragraph
Excise duty - settled at bottling: DKK 18,125.
Total estimated price per 70 cl. bottle: DKK 481.25
You can choose to put an initial payment on your cask, and subsequently divide the remaining payment into installments. The first payment is typically 50% of the total sum. You will pay the remaining installments continuously over 6 years. That way, you can stretch the cost as your whisky matures.
Initial payment: DKK 40,625.
Installments for 6 years: DKK 6,771. per year plus interests
Interests are added during the payment period, currently 7% p.a.: DKK 9,953.
Total estimated price per 70 cl. bottle: DKK 525
Taxes and charges: All prices are incl. VAT, currently 25%. Excise duty is added according to the applicable tariff, currently DKK 150 per liter of 100% ethanol. The above is a price example.
