Why Tonic?
In principle, all gin is created to be mixed with tonic. Tonic contributes with a number of properties that present the gin from its best side.
You can think of gin as a small bouillon cube of flavor. The flavoring substances are tightly packed in the ethanol and therefore need something that can unfold them and send them out of the glass.
And here the tonic is the hero in the equation. When tonic dilutes the gin, it increases the distance between the aroma molecules. This makes it easier to perceive the different flavor and aroma substances. The carbonation gives a refreshingly crisp quality to the drink, but it also helps to release the aromas so that they become more prominent in the nose and mouth.
Tonic naturally lowers the alcohol percentage so that the ethanol does not overpower the taste, but it also contributes both sweetness and bitterness. It gives the drink more contrast and a nice, harmonious balance.
